Product Development

Extensive experience in the formulation of great tasting nutritional products for sports, diet, health and well being.  Successfully developed bars, aseptic drinks, high acid drinks, baked goods and snack products for major companies in their respective markets.


ingredients

Able to assist with understanding ingredient functionality and its impact on formulations and shelf life.  Protein functionality is very complicated and I can provide guidance on specific proteins and ancillary ingredients for high protein products.  I can assist in source ingredients and suitable suppliers for ingredients as well


analytical chemistry

Started life as an analytical chemistry with a strong background in flavor and lipid chemistry.  Ability to understand how and what needs to be measured and the impact of changes on food quality and safety.
 


manufacturing processes

The product doesn't run well, is it the formula or the process.  Troubleshooting and deciding where the problem(s) lie is key in having successful launches.  I have a strong ability is deciphering where the issue is and how to correct.  Manufacturing efficiency can be gained with the right formula and ingredients which simplify the the overall process.


shelf life

Developed extensive shelf life testing protocols for a wide range of products covering sensory, chemical and physical changes occuring overtime.  Providing proprietary methodology to determine moisture and oxygen permeation in packaging and impact of water activity on shelf life.


Nutritional labeling

Experienced in formulating to achieve a specific nutritional profile as well as the development of the nutritional facts panel and ingredient statements for a wide variety of products.
